What the AI assistant knows

The AI assistant draws from several layers of food safety knowledge to give you answers that are relevant to your specific situation.

State-specific regulations. The AI knows your state's food code requirements. If you operate a food truck in Texas, it references the Texas Food Establishment Rules. If you run a cloud kitchen in California, it references California Retail Food Code requirements. This is the same regulatory knowledge that powers your AI-generated HACCP plan.

Your business type. A food truck, a cloud kitchen, and a catering company face different food safety challenges. The AI tailors its answers to your operation type, whether that means transport temperature monitoring for caterers, commissary compliance for food trucks, or multi-brand contamination controls for cloud kitchens.

FDA Food Code and HACCP principles. The AI is grounded in the FDA HACCP principles and the federal Food Code. When a question touches on critical limits, hazard analysis, or monitoring procedures, the AI provides answers consistent with these standards.

General food safety science. Beyond regulations, the AI understands the science behind food safety: pathogen growth rates, time-temperature relationships, cross-contamination vectors, allergen management, and cleaning chemistry. It can explain not just what the rule is but why it exists.

How to access the AI assistant

Getting to the AI assistant takes one tap. In PassMyKitchen's sidebar navigation, click "AI Assistant." This opens the chat interface.

The layout is straightforward. On desktop, a conversation list panel (280px wide) sits on the left side, showing your previous conversations with their titles, dates, and message counts. On mobile, this list slides over when you need it. The main chat area fills the right side of the screen.

When you open the AI assistant for the first time (or start a new conversation), you will see an empty state with the heading "Your AI compliance assistant" and the description: "Ask questions about food safety, regulations, and compliance. Get answers specific to your business and state."

Below that, three suggested question cards help you get started:

  • "What temperature should I keep my chicken at?"
  • "Do I need a HACCP plan in my state?"
  • "What documents does an inspector ask for?"

Tap any card to send that question immediately, or type your own in the input area at the bottom. The input placeholder reads "Ask a food safety question..." and a Send button sits to the right.

To start a fresh conversation at any time, click the "New chat" button (with the plus icon) at the top of the conversation list.

The AI assistant handles a wide range of food safety questions. Here are the categories where it is most useful, with example questions you can ask right away.

AI usage limits

The AI assistant has daily usage limits based on your subscription plan.

Starter plan: 50 questions per day. This is enough for most operators to ask a few questions during prep, check a regulation mid-shift, and review something after service.

Growth plan: 200 questions per day. Designed for operators with more complex needs, multiple brands, or teams where several staff members ask questions throughout the day.

Your remaining question count appears below the input area. It reads "[N] questions remaining today." When you have used 80% or more of your daily limit, the counter switches to a warning style so you know to use your remaining questions wisely. Starter plan users also see an "Upgrade for more" link next to the counter.

When you reach your daily limit, the input area is disabled. The placeholder text changes to "Daily limit reached," and a red banner appears: "You have reached your daily AI limit. Your questions reset at midnight UTC." Starter plan users see an "Upgrade for more" link in this banner pointing to the pricing page.

All limits reset at midnight UTC every day. If you consistently hit your limit, upgrading to Growth gives you four times the daily questions.

Tips for getting the best answers

The AI assistant works best when you give it specific, detailed questions. Here is how to get the most out of it.

Be specific about your situation. Instead of "Is my cooler temperature okay?" ask "My reach-in cooler is reading 43°F. What should I do?" The more context you provide, the more actionable the answer.

Include your food items. Instead of "What temperature should I cook this to?" ask "What is the minimum internal cooking temperature for a stuffed chicken breast?" The AI can identify specific hazards and regulatory requirements when it knows the product.

Ask follow-up questions. The AI remembers the context of your conversation. If you ask about chicken cooking temps, you can follow up with "What about if I am holding it on a steam table?" without repeating the details. Your conversations persist in the sidebar, so you can return to them later.

Use the feedback buttons. Each AI response has thumbs up and thumbs down buttons. This feedback helps improve the quality of answers over time.

Verify critical decisions with your health department. The AI provides well-sourced answers, but for decisions that could affect public health or your business license, confirm with your local health authority. Jurisdictions sometimes have requirements beyond the state food code.

What the AI assistant is not

Being clear about what the AI assistant does not do is just as important as knowing what it does.

It is not a replacement for your health department. The AI gives you general and state-level guidance, but local health departments may have additional requirements. Your county or city may require specific permits, procedures, or equipment that differ from the state baseline.

It is not legal advice. The AI provides food safety and regulatory information, not legal counsel. If you receive a violation, face a permit dispute, or need to understand your legal obligations after an incident, consult a food law attorney.

It is not a physical inspector. The AI cannot see your kitchen. It answers questions based on what you describe, not what it observes. An actual health inspector evaluating your setup may identify issues that the AI cannot detect from a text conversation.

Local jurisdictions may differ. Even within a single state, counties and cities can add their own food safety requirements. The AI provides state-level and federal guidance, which covers the vast majority of rules you need to follow. But if your local health department has unique requirements, those take precedence.

The AI draws from the same regulatory knowledge and business profile that generated your HACCP plan. It understands your state, business type, menu, and equipment. The AI assistant currently provides answers in English. Support for additional languages is on our roadmap. In the meantime, you can try asking questions in Spanish, and the AI may be able to respond, but the accuracy and regulatory specificity will be best in English.

What happens when I reach my daily limit?

The chat input is disabled, and a red banner tells you that your limit has been reached. Your questions reset at midnight UTC. Starter plan users see a link to upgrade for a higher daily limit. You can still browse your previous conversations and review past answers while waiting for the reset.

How accurate are the AI assistant's answers?

The AI assistant is grounded in the FDA Food Code, FDA HACCP principles, and state-specific food safety regulations. Its answers are well-sourced and specific to your state. That said, food safety regulations change, and local jurisdictions may add requirements. For critical compliance decisions (such as responding to a health department violation), confirm with your local health authority. The AI is a research accelerator, not an infallible oracle.
